Canning season is almost here!
Canning is an excellent way to preserve fruits and vegetables so that you can enjoy them all year round. But proper canning techniques are essential to ensure that your food is safe to eat and has a long shelf life. Here are 6 tips for proper canning of fruits and vegetables.
- Choose the right jars Choose jars specifically designed for canning, as these jars can withstand high temperatures and are less likely to break. Mason jars are a popular option, but there are other brands available as well. Make sure the jars are in good condition without any chips or cracks.
- Clean and sterilize Before you begin canning, ensure that your jars, lids, and utensils are all clean and sterilized. Wash the jars and lids in hot, soapy water and rinse thoroughly. Sterilize the jars by boiling them in water for 10 minutes. Keep the lids in hot water until ready to use.
- Fill jars correctly Fill the jars with the prepared fruits or vegetables, leaving the appropriate headspace as recommended in the recipe. Remove any air bubbles by running a spatula or knife along the inside of the jar.
- Apply lids and bands Place the lid on the jar and secure with a band. Tighten the band finger-tight – that is, tight enough that the lid won't come off, but not so tight that it is difficult to remove.
- Process jars Place the jars in a canner with boiling water and process for the recommended time as specified in the recipe. Follow the recipe for any additional steps such as venting or adding more water.
- Store jars After processing, remove the jars from the canner and place them on a towel to cool. Do not tighten the bands at this point, as they can interfere with the seal forming. Once the jars are cool, remove the bands and test the seals. If a seal is not tight, refrigerate the jar and use it within a few days. For properly sealed jars, store them in a cool, dry place with the bands removed.
